Crispy Crunchy Baked Chicken
The title says it all – Enjoy the taste and texture of fried chicken without all the extra fat. You can also make this recipe gluten free!
Serves 4 – 6
1 chicken, cut into 8 pieces, skin removed
2 large eggs
1 Tbs water
1 large garlic clove, minced
2 cups panko bread crumbs, regular or seasoned
1 tsp Italian seasoning
1/2 cup grated parmesan or romano cheese
1/3 cup olive oil
salt and pepper to taste
Preheat oven to 400° F.
Line a rimmed baking sheet with parchment paper. In a bowl, whisk together the eggs and water. In a separate bowl combine the bread crumbs, garlic, Italian seasoning, romano cheese, olive oil, salt and pepper. Mix by hand.
Create an assembly line with chicken pieces first, then egg wash, then coating. Always keep one hand clean. Dip the chicken pieces into the egg mixture then roll in the bread crumbs, making sure the pieces are evenly coated. Press the bread crumbs into the chicken and arrange the chicken on the baking sheet. Bake chicken for 20 minutes. With tongs, carefully turn the chicken over and bake an additional 20 minutes or until chicken is browned and
cooked to an internal temperature of 165° F.
Serve hot or at room temperature.
