Sauerkraut Salad
It's the last weekend for our Pine Tree Cafe! A delicious place to enjoy German-style comfort food, crafted by our own Chef Dave Voirin. Here is one of his occasional Pine Tree Cafe delicacies (though not on the regular menu). It's a tasty, sweet-and-sour salad that is good on its own, or as an accompaniment to German dishes. Tangy and colorful! Low in carbs as well! Serves 8-10 -- enjoy!
Ingredients:
32 oz. jar of sauerkraut, undrained
1 1/2 cups granulated sugar
3/4 cup cider vinegar"
1/4 cup vegetable or canola oil
1 1/2 cups diced celery
1 onion, thinly sliced
1 small red bell pepper, diced
Instructions:
Combine the sugar, vinegar and oil in a small sauce pan. Bring to a boil and remove from heat. In a glass or plastic mixing bowl, combine the sauerkraut, celery, onion and bell pepper. Add the dressing and stir to combine. Refrigerate for 24 hours.
